Ingredients

  • 1 1/2 cup chopped pineapple
  • 1 cup chopped plum tomato (around 2 plum tomatoes)
  • 1/2 cup chopped red onions
  • 1/4 cup chopped red bell peppers
  • 1 fresh chile, seeds and stem removed, chopped
  • Juice of one or two limes (2-3 Tbsp, to taste)
  • 1/4 teaspoon salt
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup chopped fresh cilantro, packed

Recipe

STEP 1

Combine all of the ingredients in a medium sized bowl and mix well. Serve cold or room temperature.
